Manuel Policarpo, General Manager of the five-star, award-winning Eden Bleu Hotel, Seychelles, is delighted to announce the appointment of new Executive Chef Ricky Madeleine, with immediate effect. Chef Ricky Madeleine is the only Seychellois Executive Chef in a five-star property in the Seychelles.
Chef Ricky is a Seychellois chef through and through. Ricky Madeleine wanted to be a chef from the age of 16 and was inspired by his uncle who, at the time, was an executive sous chef at a hotel in the Seychelles. He started his culinary career in 1998 at the La Misere Hotel School on Mahé. During this time, he also obtained practical experience at the Mahé Beach Hotel and refining his pastry techniques at the 5-star Constance Lemuria Resort in Praslin. In addition, he honed his skills at the Four Seasons Resort, Seychelles. Chef Ricky Madeleine has been with Eden Bleu for three years and started his career at the property as an Executive Sous Chef in 2015. Chef Ricky Madeleine enjoys learning new skills and has obtained many of these from observing chefs he has worked with throughout his career. In his new role as Executive Chef, Chef Ricky Madeleine will lead a team of 17 in the kitchen and will prepare dishes inspired by the islands and influences of the Seychelles, combined with an international twist.
Chef Ricky Madeleine believes that the fundamentals he learnt as a pastry chef applies to all aspects of cooking. “I chose to specialise in pastry because it is more difficult and because you need patience — you have to carefully respect every step of the recipe: dosages, preparation, timing, temperatures. If you miss just one small detail it won’t work out. Of course, there is space for creativity, but you must respect the basic rules first and foremost.” It is this methodical and respectful approach, combined with his Seychelles’ heritage which has influenced his cooking style, which is created by preserving the original flavours of fresh ingredients as well as smoothly combining the flavours of Creole and International cultures.
