Genting Cruise Lines welcomes Explorer Dream to its fleet

April 12, 2019 by Forimmediaterelease

Genting Cruise Lines welcomed the third member of its Dream Cruises’ fleet with the christening and inaugural homeport deployment of Explorer Dream in Shanghai Wusongkou International Cruise Terminal. Explorer Dream is the first newly-launched cruise ship of the post-recalibration period in the Chinese cruise industry and her arrival also marks Dream Cruises’ debut in Eastern China, with the cruise liner purposely-built and recently renovated for the Asian and Chinese luxury market. Leveraging on the deployment of Explorer Dream, Dream Cruises’ first 200,000-tonne Global Class ship, set to debut in 2021, will also celebrate her inaugural deployment in Shanghai as the largest cruise ship to homeport in the Asia-Pacific.

Honorable guests Mr. Su Ping, Vice Magistrate of Shanghai Baoshan District Government and Mr. Hui Lim, Deputy Chief Executive Officer and Executive Director of Genting Hong Kong were joined by management executives and over 500 guests at the ceremonial launch event. The christening ceremony featured Ms. Grace Chen, the godmother of Explorer Dream and one of the most influential fashion innovators in China. The innovative christening was activated by her magic wand of dreams and aspirations and the spirit of exploration was symbolised by a majestic unicorn that led the iconic Dream Cruises’ mermaid out of the ocean and into a new realm, where she will embark on the quest to discover new horizons across the seas. With the traditional breaking of the champagne bottle against the bow of the ship, Explorer Dream officially begins her journey with Dream Cruises.

“Dream Cruises is the most recognized cruise brand in Southern China due to World Dream being positioned in the dual homeports of Guangzhou and Hong Kong. However, as we all know, the Eastern and North Chinese market is five times larger than the south and Dream Cruises will be building two 204,000 gross ton “Global Class” ships to be launched starting early 2021 in Shanghai and Tianjin to accommodate this market. These two ships, being built in our own shipyards Germany, are also designed to be the most advanced and intelligent cruise ships ever to be constructed,” said Mr. Hui Lim, Deputy Chief Executive Officer and Executive Director of Genting Hong Kong. said, “In order to prepare the foundations and increase Dream Cruises’ brand awareness in East and North China, we are pleased today to welcome “Explorer Dream” in Shanghai as the third ship in our Dream Cruises fleet.”

Explorer Dream is the second cruise ship of Genting Cruise Lines to homeport in Shanghai, made possible by the tremendous support of the Shanghai Baoshan District Government. Mr. Su Ping, Vice Magistrate of Shanghai Baoshan District Government said, “In July 2017, Genting Cruise Lines launched the Golden Sea Route 7-night itinerary in Shanghai, which garnered the Best Itinerary Award during the Shanghai Cruise Tourism Festival. In October 2018, a strategic Memorandum of Understanding was signed between the Baoshan District Government and Genting Cruise Lines to forge a new partnership. Now, the inaugural arrival of Explorer Dream, the newest member of Dream Cruises in Shanghai, will bring forth distinctive and premium cruise travel products to propel the optimal development of the cruise industry in China.”

After the inaugural ceremony, Grace Chen presented a spectacular fashion show at sea aboard the ship. Eighteen models showcased her Voyage collection and walked the runway on the Palace Pool Deck, where guests enjoyed a visual feast inspired by the spirit of exploration and discovery, both of which are the brand essence of Dream Cruises.

Since its launch two years ago, Dream Cruises has garnered numerous accolades for its two cruise ships, Genting Dream which debuted in 2016 and World Dream in 2017, including Star Performer Top Ten Ratings in the Large Resort Category, “Most Popular Family Cruise Brand in China 2018” by Global Times, Top 5 Cruise Lines in the Large/Medium sized cruise ship category by Conde Nast Traveler’s Gold List and more.

Built with German craftsmanship, Explorer Dream measures 268 meters in length and 32 meters in width. She has a total gross tonnage of 75,338 tons, 928 cabins and lower berth capacity of 1,856 passengers. The signature, luxury “ship within a ship” enclave of Dream Cruises – The Palace, provides an unprecedented “True Asian Luxury” experience to discerning travelers in China and Asia, boasting an industry leading staff to guest ratio, a majority of its suites at over 40 square meters, as well as Proprietary Butler Training endorsed by affiliated company Crystal Cruises – The World’s Most Awarded Luxury Cruise Line.

A generous variety of culinary options will also be available to cater for every taste – from inspired Asian flavours to exquisite Western delicacies. Acclaimed Australian Chef Mark Best will extend his influence on to Explorer Dream with his Seafood Grill by Mark Best serving up the ocean’s bounty in a spectacular al fresco setting. Signature Dream dining favorites will also take pride of place on the new ship including Umi Uma for Japanese delights, Silk Road for traditional Chinese fare, Blue Lagoon for Southeast Asian comfort food and Palm Court for informal refreshments and breath-taking views. For adventurous foodies, the all new Mozzarella Ristorante e Pizzeria will tantalize with a modern fusion of classic Italian dishes and pizzas with a Japanese twist.

Guests of Explorer Dream can also enjoy thematic programs on their journeys at sea including “The Connoisseurs Circle” bespoke enrichment program, featuring inspirational talks and events that are especially curated for guests of The Palace, such as a fashion talk by Grace Chen, the godmother of Explorer Dream.

As the fastest cruise ship in Asia, Explorer Dream offers a great variety of itineraries and flexibility. Sailings from Shanghai homeport will take guests on cruises to popular destinations in Japan that range from 3-night to 6-night itineraries, such as the 3-night cruises to Kyoto, Osaka or Kobe, or the 2-night round-trip cruise to Okinawa. In the month of April, when cherry blossoms in Japan are in bloom, guests can enjoy the dazzling floral display on shore, complemented by authentic Japanese experiences on the cruise, such as specialty dishes featuring Japanese Wagyu beef and pork, tuna cutting performances, Yukata trials, poolside festivals and more.

Starting from 1 July, Explorer Dream will begin her homeport deployment in Tianjin with more summer cruise options for family travelers, who will enjoy the renowned stage productions of Kaixin Mahua at sea. Taking the first step to evolve Dream Cruises into “Asia’s Global Cruise Line” by sailing outside Asian waters, in October 2019, Explorer Dream will homeport in Sydney and Auckland where she will embark on a variety of seven-night weekly itineraries to “Down Under” destinations.

Lennox Hotels to opens its first US property this summer

April 11, 2019 by Forimmediaterelease

A new modern hotel, combining contemporary design with original Art Deco design, is on the horizon in South Florida hotspot, Miami Beach. Lennox Hotel Miami Beach will be a bold luxury boutique property offering stylish accommodation and an authentic Miami experience.

Located in what was once the Peter Miller Hotel, the property is a protected building in heart of the area’s Historic District. Lennox Hotels has undertaken a complete transformation of the building, maintaining its legacy by retaining its original Art Deco and Mediterranean Revival architectural style exterior and transforming it into a living landmark.

The hotel – located on Miami’s iconic Collins Avenue – will offer 119 contemporary guestrooms, each unique in keeping with the original form of the building. The rooms are enhanced by natural elements, handcrafted furnishings, and eco-friendly and upcycled materials meticulously curated by acclaimed Argentinian interior designer Juan Ciavarella. Soft neutral tones and unique textiles combine in rooms that will range in categories from Terrace Poolside with direct pool access, to Balcony King with private balcony overlooking the colourful streets of Miami Beach.

At the centre of the property’s four interconnected buildings, a Mediterranean-style courtyard features an intimate swimming pool and poolside bar offering al fresco dining and serving innovative cocktails.

Lennox Hotels is an Argentinian hotel group with properties in Buenos Aires and Ushuaia. CEO of Lennox Hotels, Diego Agnelli, said:

“We are thrilled to be expanding the Lennox Hotel brand to the U.S. with the opening of Lennox Hotel Miami Beach. Our reasons for choosing this area were as much because of the area’s vibrancy and liveliness as it was because of the welcoming spirit of its people and the friendliness they express toward travellers. Our vision for Lennox Hotel Miami Beach is to provide a sophisticated and inviting setting for travellers to live an authentic Miami experience, one that not only provides a place to mingle with the locals, but also allows them to feel like locals and enjoy the area, its culture and vivacity through the lens of a local.”

Transforming a historical landmark

The historic structure was designed by architect Russell Pancoast in 1934. Pancoast is known for much of Miami Beach’s most celebrated buildings, including the Surf Club, the Church by the Sea and the Miami Beach Auditorium.
The property has the notable distinction of being among the 300 Miami Beach buildings that were leased by the U.S. Army for the Air Forces Technical Training Command during World War II. The buildings returned to civilian use in 1943 and remained a military property until 1944. The structure is now part of the Historic District.
The transformation of the hotel’s original structure into Lennox Hotel Miami Beach is the work of veteran Miami architect Beilison Gomez.

AIDS/HIV research supported by design community

April 6, 2019 by Forimmediaterelease

Members of the Design Industries have supported AIDS research since 1984 through the Design Industries Foundation Fighting Aids (DIFFA), a 501 (c)(3) charitable organization incorporated in New York State.

DIFFA started as a grassroots organization and today is a national foundation headquartered in New York City with chapters in Chicago, Dallas, San Francisco and the Pacific Northwest. The organization also partners with gift and home industries and other organizations throughout the USA. DIFFA and its partners have raised over $44 million for hundreds of HIV/AIDS organizations nationwide providing education and prevention programs that run the gamut from condom distribution and needle exchanges to protection of legal rights and security for people living with HIV/AIDS.

Every March, DIFFA invites local and international designers to take raw space and morph it into a showcase of WOW dining table-top environments. It is co-located with the Architectural Digest Design Show and thousands of designers, architects, buyers, sellers, media and design educators support this unique event held at Pier 92 in Manhattan.

Dining by Design attracts over 40,000 guests who view dining installations by more than 30 designers, architects, manufacturers and brands. Designers include: Black Designs + Artists Guild, Sheila Bridges, Mikel Welch, Stacy Garcia, Damour Drake, Kingston Design Connection, Joshua David Home, Inc. Architecture, Lucina Loya, Patrick Mele for Benjamin Moore, Roric Tobin for Modern Luxury and David Scott Interiors for Roche Bobois and Stonehill Taylor for Ultrafabrics.

Curated Design-Inspired Table-Scapes

  • Patrick Mele for Benjamin Moore

This table-scape celebrates glamour from an earlier decade and another world. It is presented in a contemporary format with a mélange of berry, cream, gold and silver giving the space an airy and spring-like ambiance that enhances the trompe l’oeil details and highlights its creativity.

  • Rockwell Group

This table-scape is inspired by The Peacock Room, James McNeill Whistler’s masterpiece of interior decorative art. The tableau features digital wallcovering and a custom handmade peacock-feather tablecloth, creating an abstract, modern interpretation of luxuriously – decadent space.

  • Stonehill Taylor for Ultrafabrics

“Journey” links nearly 4 decades of research and human achievement in the fight against AIDS. The colors and patterns suggest the body and being, while the swirling, layered centerpiece addresses hope and optimism thanks to ongoing advances in science and technology.

  • Mckenzie Liautaud/Robert Verdi

Inspired by water and the nexus between the river and the sea, jewelry designer @Mckenziel and tastemaker @RobertVerdi present a table-scape that features pearls and their origin. Dinner guests are seated on pearl-like stools at a table set with silver and crystal under the stars.

Auction (Curated)

Dining by Design features a silent auction that presents innovative products, original works of art and unusual, quirky experiences.

  • Infiore Floor Lamp by Estiluz

The lamp was designed by the Lagrania Studio. Fiore means flower in Italian, and this is an original elegant lamp that opens it petals and shines it unique light wherever it is placed. The bi-injected polycarbonate petals provide a two-color lighting effect. A halogen bulb is hidden within and is protected by satinized glass that delivers a warm, pleasant light that presents different tones and color effects.

  • Izmir Filo Table Lamp

This playful table lamp was designed by Andrea Anastasio for Foscarini. The lamp and its cord land casually on a tripod, and on the cord are large, effective glass beads. The Filo Lamp is an artistic masterpiece that will be admired forever.

TableVision: A virtual reality training solution for waitstaff on cruises

March 27, 2019 by Forimmediaterelease

Pixvana, a virtual reality solutions provider, today announced that it has partnered with Seabourn, to create and launch “TableVision”, a virtual reality training solution for waitstaff.  The new interactive VR training video enables new Seabourn employees to master the massive, 105 tables, 12 serving station, dining room in a fraction of the time – without internet or access to the actual room.

“A major hurdle to staff training is the fact that the ship is almost always in full operation, with the dining room perpetually occupied with either customers or the cleaning crew,” said Rocky Sudlesky, the Seabourn Fleet Learning and Development Lead Specialist. “Finding a window of time to manually train new employees was both cumbersome and inefficient.  Instead, we turned to the pros at Pixvana who handled everything from creative design to post-production and headset implementation.  The end result is a completely tailored training experience that not only saves Seabourn Learning and Development time and money, but also provides staff with a more engaging, efficient, and accessible opportunity to learn.”

Pixvana utilized SPIN Studio, its proprietary VR-native platform,  to design and create the project in entirety.  After analyzing the environment and drafting an optimized day-of plan, the team executed a fast, 4 hour on-set shoot – creating 26 scenes connected by 90 hyperports.  Over 300 assets were then applied in a post production period – including branded, togglable graphic labels over the tables.  The highly engaging experience simulates the psychological experience of wandering through the dining room with interactive tools that enhance training recall.

Pivana also provided access to its proprietary VR Casting feature, giving Seabourn Learning and Development the ability to conduct VR training sessions even when ‘offline’.  Using VR Casting, TableVision can be securely transmitted and downloaded to any Oculus Go headset in the highest resolution, ready to be accessed at any moment and from any point around the globe.

“Pixvana is the only VR company in the world that offers clients access to both an award-winning creative services team and the power of a proprietary VR-native platform,” said Rachel Lanham, Chief Operating Officer of Pixvana.  “By creating tailored VR training experiences that leverage the VR superpowers – presence, empathy and immersion – we can maximize workforce engagement and retention.  We believe there’s huge potential for immersive learning in the corporate world and Seabourn’s dedication to unparalleled service puts them at the forefront of innovative training in the cruise industry.”

Upon complete roll out of TableVision across each of Seabourn’s custom dining rooms, Pixvana will work to complete more training experiences for Seabourn Learning and Development, helping them develop an overall strategy to integrate VR into their investments in training innovation and improve results.

Alongside his team from The Westin Langkawi, the widely-travelled food connoisseur will also be in charge of elevating culinary offerings at the Langkawi International Convention Centre (LICC), the island’s leading and largest centre of its kind.

Glen arrives in Langkawi after a stint at the 5-star Emerald Palace Kempinski Dubai, where he was part of the pre-opening team. Prior to his spell in the United Arab Emirates, he spent two years, from 2016, as the Executive Chef at the Shangri-La in Surabaya. His culinary adventures, however, began almost 5,000 kilometres and 40 years ago in Australia.

He began his love affair with food in Australia in the mid-1980s before honing his culinary skills in London and New Zealand. Glen returned to Brisbane and progressed to become second in charge to the Executive Chef of the Hyatt Regency Coolum in Queensland, overseeing 10 food outlets and multi-banquet facilities. He later moved to the Park Hyatt in Canberra, where his tenure as Senior Executive Sous Chef saw him attending to HRH Queen Elizabeth and Prince Edward, Earl of Wessex during their visit there in 2002.

Seeking new horizons, Glen was part of the team that launched the Grand Hyatt Dubai. He then set his sights on the Sheraton Grand Laguna Phuket in Thailand, where he celebrated his first stint as Executive Chef in 2003. Two years later, he found himself in East Malaysia at the Shangri-La Rasa Ria Resort. Whilst there one of the many highlights was to be the key driver behind the production of the “Taste of Borneo” cookbook, which focused on the preparation of 5-star cuisine using local products from Sabah.

In 2010, Glen was an integral part of the team behind the successful renovation and reopening of the Shangri-La Rasa Sentosa Resort in Singapore. He continued to spearhead the resort until 2013, when he moved to the Shangri-La Fijian Resort and Spa as their Executive Chef.

Longing to once again step back into Southeast Asia, he made his way to Thailand’s InterContinental Hua Hin Resort in 2015. Glen was involved in developing and opening the resort’s Roof Top bar and BluPort Wing, which features 40 guest rooms, an all-day dining restaurant, meeting rooms and ballroom.

“Food is my passion, and I’ve also missed this lovely region,” laughs Glen. “By combining the two, I hope to tantalize guests at The Westin Langkawi with some of the healthiest, tastiest cuisine in Southeast Asia while maintaining our international-class standards of service, quality and hospitality.”

Centrally located on 104 acres of lush, Langkawi tropical gardens bordered by the Andaman Sea, The Westin Langkawi Resort & Spa comprises 221 spacious, fully-appointed rooms and suites. The resort also features 20 ultra-luxury Ocean View Pool villas complete with personal pools as well as the award-winning Heavenly Spa by Westin, the only Heavenly Spa in Malaysia.

Five challenges confronting Meetings Industry in 2019

March 25, 2019 by Forimmediaterelease

Tight meeting budgets, time pressures, organizational issues, a lack of creativity from hotels, increasingly complex and costly mandates in catering, a need for more dynamic and enriching experiences and resistance to change – these are among the major challenges confronting the meetings industry in 2019.Teneo Hospitality Group surveyed 150 meeting planners and hoteliers on the challenges they faced in effectively competing in today’s changing and complicated marketplace. Interestingly, some of the challenges planners faced are internal, within their own organizations. All identified limited meetings budgets, lack of time and somewhat inflexible corporate cultures that gave rise to additional problems such as a lack of innovation and poor cost control.

“‘Many of these challenges – and their solutions – are interdependent,” says Teneo President Mike Schugt. He notes that meeting professionals are saying that they have concerns within their organization and corporate cultures which contribute to resistance to change, resulting in budgets that are impacted negatively. Planners are also saying that these challenges, coupled with the many demands on time, inhibit creative strategies that could otherwise help solve the obstacles pointed out in Teneo’s most recent survey.

“Teneo and its hotel and DMC members have a unique opportunity to step up and help solve the challenges of our planner partners,” says Mike Schugt. “We can introduce creative, time-saving offerings that can also meet their bottom line. By understanding the needs that go beyond rates, dates and space, hotels can provide innovative, solutions to the challenges planners face behind the scenes.”

Challenge #1 Budgets. Inadequate budgets headed the challenge lists for all survey participants. Planners cited rising costs, especially concerning food and beverage, with no comparable increase in budgets. The complexities of gaining budget increases from various corporate departments impact every aspect of the meeting process from training staff to negotiating contracts. Despite a strong economy, some planners reported budget cuts. Respondents noted that the inability to obtain adequate funding reflected a lack of understanding of the profound changes in the meetings industry that demanded more, not less, investment. Needs of attendees are very different today, especially among Millennials and Generation Z who require a high degree of technical services, greater engagement and entertaining activities – needs that are difficult to meet on a tight budget. Yet management and attendees had extremely high expectations.

Suggested Solution: The fundamental way planners can achieve their budget is to be transparent and in open communication with a property. Though the tendency may be to play one’s cards close to the vest, transparency from the beginning of negotiations is key to effective planning and keeping costs in check. While many planners feel they must keep back some of their budgetary concerns until further on in the planning process, an honest and comprehensive view of the meetings objectives and resources will enable hoteliers to present a realistic budget.

Challenge #2 Lack of Time. Time pressures impact every business and organization, but some concerns have particular ramifications for the meetings industry. Virtually all respondents cited a lack of time and identified challenges that could have far-reaching consequences. With sweeping advances in technology impacting the industry, hoteliers and planners noted that they often lacked the time to keep up with technical developments. This problem was amplified when attendees were ahead of the planners and hotels in their own use of technology. Training a new generation of meeting planners and hotel staff is key to the industry’s progress. But few had time to develop effective programs, tailored to meet the different viewpoints and technical skills of a new generation. Most significantly, respondents worried that the overwhelming details of day-to-day work left little time for long-term, strategic planning. And the top time waster? Too many unnecessary e-mails.

Suggested Solution: Hotels are often inundated with leads and may not always be able to reply in 24 hours. Planners are encouraged to indicate their timeline for response up front so hotels and resorts can offer a higher quality of response. For planners, they can then gather their lead responses all at one time and be assured that the quality of response is going to be higher if a little more time is allocated to the properties of interest. Planners that source more than 6 or 7 hotels per lead and in multiple cities will tend to be taken less seriously by a hotel. So planners can save time and drive up quality of response by reducing the number of hotel sources they contact.

If planners can share flexibility with dates early in the process, they will save time and the hotels can provide multiple options, which will likely have differences in pricing leading to greater value with the budget. Giving the hotel as much information as possible saves everyone time and can save on the budget.

Challenge #3 Keeping Up with Technology. In a technological environment that is moving at lightning speed, staying current and knowledgeable of technology’s impact on meeting productivity can be daunting. Realizing that millennial attendees may be way ahead in their technical knowledge, technology applications and expectations can be intimidating. Even leadership within select organizations don’t always seem to grasp how technology is revolutionizing the meetings experience today.

Suggested Solution: Staying current and out front with technological progress is critical to the successful outcome of every meeting, conference or social gathering. Yes, some long-term practices are still prized such as white boards and LCD players. But engaging with attendee devices puts the meeting’s learning literally in the hands of conferees in a way that resonates within a generation who grew up on texting, social media posts, interactive apps and more. These are the tools they use for their everyday living, and should be the tools they can expect to use within meetings important to their and their employer’s success.

Challenge #4 Lack of Creativity. Big brand hotels’ corporate bureaucracy partially accounts for planners’ demand for greater creativity in the meeting process, and a far more flexible business environment. Larger hotel brands often have corporate policies that may place limits on pushing the boundaries of creating the ultimate meeting experiences for planners. But the need for innovation and original events, imaginative use of technology, effective teambuilding exercises, new experiences in even the most tried and true destinations, and diverse, sustainable and healthy food cannot be ignored.

Suggested Solution: Partner with a hotel or resort that creatively works with planners and groups to construct a meeting itinerary customized to a specific group and set of meeting objectives. Independent and small brand properties, by the very nature of their independence, have proven to be expert in creatively discovering and helping plan for achieving meeting goals of professional planners and groups, doing so with out-of-the-box thinking, highly unique group initiatives, and far from run-of-the-mill teambuilding programming. Private destination management companies can also be an important resource, and Teneo suggests partnering with them to help make a city or destination come alive for meeting guests by maximizing local resources and attractions in a way that is meaningful to the group.

Challenge #5 Increasing Complexity and Rising Costs of Food & Beverage. As the population becomes more diverse, food preferences and dietary requirements have become more complicated. Growing awareness of wellness and sustainability issues add to a mix that could become more problematic and costlier. Paleo, keto, pescatarian, vegan and religious dietary requests are among the newest trends in conference dining in 2019. Respondents also called for better management of food ordering to keep costs down and eliminate waste.

Suggested Solution: This is an area where independent and small-brand hotels can get ultra-creative for the planner as they are in a more entrepreneurial and creative mode, less restricted by big-brand requirements and constraints. They can typically offer a more creative product with reduced costs. By working with chefs and banquet managers from these properties at the beginning of the planning process and being candid about budget constraints, it’s possible to obtain serious savings on food and beverage while achieving maximum creativity.

The Balmoral hotel announces Head Chef at its Michelin-starred restaurant

March 25, 2019 by Forimmediaterelease

The Balmoral, a Rocco Forte hotel in Edinburgh, announced Mark Donald as the new Head Chef of Number One – the hotel’s one Michelin star restaurant. The Scottish born chef’s homecoming follows a 13 year stint abroad honing his skills on the international culinary scene working with some of the most respected chefs in the industry.

Mark joins Number One, named after the hotel’s iconic address 1 Princes Street, from Sydney, Australia where he was Head Chef at Bentley Restaurant and Bar. Prior to this he worked at a number of internationally renowned two Michelin star establishments including senior roles at Claude Bosi’s flagship Hibiscus restaurant in London and at Restaurant Andrew Fairlie at Gleneagles in Perthshire. Mark also spent a significant stage at Noma in Copenhagen – the San Pellegrino World’s Best Restaurant at that time.

Mark oversees a team of 13 chefs in Number One and has created an innovative new menu inspired by Scotland and flavoured by his and the team’s international travels. New dishes on the menu include oysters with smoked kipper and parsley; hand dived scallops with Iberico pork and black garlic ketchup and Scottish wood pigeon, green juniper and blood and potato cake. An exciting new partnership has placed Highland Wagyu beef on the menu for the first time at Number One, served with beetroot and smoked bone marrow.

Commenting on the new appointment, The Balmoral’s Executive Chef Jeff Bland said:

“Mark brings a fantastic grounding in fine-dining having worked at some incredible world renowned establishments. His approach to fusing the best of Scottish produce with international flavours brings a fresh new style to Number One. Mark will take Number One to new heights as he respects the restaurant’s ethos of continually innovating and surprising our guests.”

Mark added: “After traveling and working in some incredible locations, I felt it was time to come home to beautiful Scotland. The Balmoral is such an iconic property steeped in history and I’m thrilled to have the opportunity to work with such a fantastic team in the heart of Edinburgh.”

Mark and his team have also developed relationships with many local producers to elevate the different offering. Together with his pastry team, he has created individual bread loaves using local East Lothian barley served with Perthshire apple vinegar, Highland rapeseed oil and Mark’s home-made cultured butter with cream from Kelso dairy farms. Standout desserts include Pink Lady apple tart, Amedei chocolate mille feuille and blood orange, pumpkin and buttermilk.

World class Scottish hospitality is at the heart of Number One. Guests also have the chance to experience the team’s inherent fun side with a final treat in the form of a sweetie trolley.

Enjoy a rhubarb and custard macaron, foie gras chocolate truffle or a traditional piece of Scottish tablet with a coffee and a dram.

Single-use plastic ban, food waste and local produce top priorities in Centara’s 2019 Sustainability Plan

March 22, 2019 by Forimmediaterelease

Centara Hotels & Resorts, Thailand’s leading hotel operator, is focusing on three key sustainability initiatives as part of the company’s recently announced 2019 Sustainability Plan: eliminating single-use plastic products; reducing its food waste footprint; and expanding its support of local farming and produce-growing communities.

  1. No Single-Use Plastic Products by end-2019

The elimination of single-use plastic items is part of the “Centara Earth Care” program aimed at encouraging hotel guests and tourists to be proactive about energy saving, waste reduction and sustainable environmental tourism. The sustainability plan covers five types of single-use plastic items, including drinking straws, laundry bags, take-away food containers, fitness center and poolside plastic bottles, and plastic guest room amenities. They are being replaced with items made from materials designed to minimize environmental impact.

“Centara strives to operate ethically and sustainably in a balanced manner across the entire portfolio whilst providing an exceptional level of Thai hospitality,” said Thirayuth Chirathivat, Chief Executive Officer. “We are committed to selecting environmentally friendly produce which, in turn, enables us to further incorporate sustainable strategies and development into our products and services, creating shared value at an environmental, social and economic level wherever we operate. We are also committed to ensuring a respectful, safe and healthy environment to the larger society and our future generations.”

Centara began phasing in its elimination of single-use plastic products in 2018 across all 39 of its operating properties. Under the plan, alternative products which are reusable and made from environmentally friendlier materials, including plant-based, compostable and bio-degradable plastics, will be fully phased in by year-end.

  • Phase I, targeting the elimination of plastic straws, began in August 2018. The single-use plastic straws being eliminated take up to 200 years to decompose; the new bio-straws replacing them decompose within six months. Once the change is fully enacted throughout all Centara properties, the reduction in plastic straw consumption will total nearly 2.2 million straws per year.

  • Phase II, eliminating the use of plastic laundry bags, began in December 2018. Moving forward, these practices will also become Centara’s standards for all existing and new properties.

  1. Food Waste Reduction

Centara’s new and continuing food-related sustainability initiatives include:

  • further reducing food waste and minimizing each property’s carbon footprint with expanded purchasing of fresh local foods from herb, fruit and vegetable growers
  • making same-day donations of surplus food to charities located near each property
  • providing local farms with pre-separated organic waste for composting
  • transforming waste at select properties into biogas fuel, a blend of mostly methane and carbon dioxide gases which can be used in place of fossil fuels.

In 2018, Centara supported the Bangkok-based foundation Scholars of Sustenance (SOS Thailand) by making same-day donations of more than 28,000 kilograms (kg) of quality surplus food. The donations provided over 86,000 servings to those in need, while the reduction in Centara’s food waste saved over 54,000 kg of GHG equivalent emissions.

Both Centra by Centara Maris Resort Jomtien and Centara Grand Beach Resort Phuket have biogas machines on-site capable of converting 30-100 kg of organic waste each day into an equivalent number of litres of organic compost and biogas comparable to nearly five kg/day of LPG fuel. Since July 2018, the Cowtec Composting & Biogas Production Machine installed at Centra by Centara Maris Resort Jomtien has been processing organic waste from the property’s kitchens, staff canteens and landscaping works. By the end of 2018, the machine had composted more than 5,700 kg of organic waste and produced 262 kg of biogas equivalent LPG.

  1. Strengthen Local Communities

Centara’s 2019 Sustainability Plan further expands the company’s support for local communities’ small farms and producers who grow food for Centara hotels and resorts in their area.

The company attributes much of its carbon footprint reduction to making approximately 70% of total produce purchases from local sources. Beyond the economic benefits to the community, expanding farm-to-table dining enables each property to provide the freshest available food items to guests.

The company’s ongoing engagement with EarthCheck, the world’s leading scientific benchmarking, certification and advisory group for travel and tourism, continues to yield consequential improvements in key sustainability metrics. To date, 15 Centara hotels and resorts have achieved EarthCheck certification and another four properties are enrolled in  EarthCheck’s Evaluate Plus program, leading to significant reductions in carbon footprints and greenhouse gas emissions across a number of Centara’s certified properties.

Most recently, the company’s leadership in environmental sustainability was recognized by the Stock Exchange of Thailand, which awarded Centara Hotels & Resorts (CENTEL) its “Thailand Sustainability Investment (THSI)” designation, an annual recognition for listed companies that operate with responsibility for Environmental, Social and Governance (ESG) aspects.

Further recognition for properties includes the “Green Hotel 2018 Award” from the Department of Environmental Quality Promotion at Thailand’s Ministry of Natural Resources and Environment, awarded to Centara Grand Beach Resort & Villas Hua Hin and Centra by Centara Maris Resort Jomtien.

Centara Hotels & Resorts is Thailand’s leading hotel operator. Its 68 properties span all major Thai destinations plus the Maldives, Sri Lanka, Vietnam, Laos, China, Oman, Qatar and the UAE. Centara’s portfolio comprises six brands – Centara Grand Hotels & Resorts, Centara Hotels & Resorts, Centara Boutique Collection, Centra by Centara, Centara Residences & Suites and COSI Hotels – ranging from 5-star city hotels and luxurious island retreats to family resorts and affordable lifestyle concepts supported by innovative technology. It also operates state-of-the-art convention centers and has its own award-winning spa brand, Cenvaree.
